Cauliflower Chocolate Pudding Recipe with Loblaws + Gift Card Giveaway
At the start of 2016 I moved in with the boyfriend and one of the selling points to moving to the area is the fact that shopping is so close by and that includes my favourite grocery store, Loblaws. Not only am I lucky enough to live so closely to a grocery store, but with Loblaws, I have access to such an incredible array of fresh, local ingredients – especially during the summer and fall months. I enjoyed mouthwatering watermelon, crips corn and all the squash my little heart desired.
Loblaws happens to be the largest purchaser of locally grown food in the country with 40 per cent of produce sold in their stores which is sourced by Canadian growers during this peak season. It is truly amazing to walk into my local Loblaws store and never be disappointed by their selection of produce. Fun fact. 99.9% of my recipes here are on the blog are made from ingredients bought at Loblaws – not to mention the countless bouquet of flowers I indulge in each week! Loblaws has teamed up with the vegan YamChops butcher, Michael Abramson to create some unique, seasonally inspired recipes, perfect for dining and entertaining! The recipes are so amazing that I just had to make his Cauliflower Chocolate Pudding myself! It’s so yummy to enjoy and even easier to make! Not to mention it’s made with healthy ingredients!
CAULIFLOWER CHOCOLATE PUDDING
Cauliflower has been rising in popularity because of its versatility and nutritional value. This dish takes cauliflower to new heights, by using it to create something entirely unexpected: a sugar-free, super chocolatey after dinner treat.
Serves: 6 people
Prep time: 20 minutes
Difficulty Level: Intermediate

INGREDIENTS
- 3 cups (385 g) Cauliflower, divided
- 1 cup and ¼ cup Almond Milk
- 1/3 cup Cocoa powder
- 10 Medjool dates
- 1 tbsp PC® 100% Pure Medium Maple Syrup
- 1 tsp PC® Pure Vanilla Extract
DIRECTIONS
- Wash cauliflower and break into small florets.
- Steam cauliflower until very tender and easily pierced with a skewer.
- Pit dates.
- Add dates and steamed cauliflower to a high-speed blender along with one cup of almond milk, maple syrup and vanilla.
- Blend until very smooth. Thin to desired consistency with remaining ¼ cup almond milk.
- Cover tightly and refrigerate until ready to serve. The pudding will thicken slightly in the refrigerator.
TIP: Cauliflower Chocolate Pudding may be kept covered in refrigerator for 3 days.
